Healthy Banana Oatmeal Raisin Cookies
Yields: 15 biscuits
These oatmeal cookies are tender, chewy, and full of banana flavor! The familiar comfy spices and plump raisins make them much more irresistible. They'll keep for a minumum of one week if kept in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (fermented if needed and measured like that )
3/4 cup (90g) whole wheat or fermented * flour (quantified like this)
1 1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.
Using a spoon and spatula, drop the cookie dough into 15 curved scoops on the sheet, and apply to the desired depth and width by means Soft-Baked Vegan Sugar Cookies The Mostly Vegan of a spatula. Bake in 325°F for 10-12 minutes.
