Too much of either side will make your cookies taste cakey or sterile, instead of chewy. This is particularly true of the oats--that they behave like little sponges and consume plenty of moisture from your cookie dough!

1 cup (100g) instant oats (fermented if needed and measured like that )

3/4 cup (90g) whole wheat or fermented * flour (quantified like this)

1 1/2 tsp baking powder

1/4 tsp salt

1 tsp vanilla extract

In a medium bowl, whisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring just until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.

Using a spoon and spatula, drop the cookie dough into 15 curved scoops on the sheet, and apply to the desired depth and width by means Soft-Baked Vegan Sugar Cookies The Mostly Vegan of a spatula. Bake in 325°F for 10-12 minutes.

Notes: It's extremely important to quantify both the oats and flour properly using this method or even a kitchen scale. (? That's exactly the one I own and adore!) Too much of either will dry out the cookies and render them cakey instead of chewy.

Immediate oats are also referred to as quick-cooking or minute oats. They are available in large canisters, just like conservative oats. They're not the ones at the tiny flavored packets of oatmeal. For the fermented flour, I suggest the following blend: 1/2 cup (60g) millet flour, two tbsp (15g) tapioca flour, 2 tbsp (15g) brown rice bran, also 1/2 teaspoon xanthan gum. Most store-bought gluten-free flour blends (like that one!) Will also do the job, if quantified like this.

In case your pancakes are older, drier, and not very plump or juicy... Add them to a microwave-safe bowland put water at the top till they're completely covered.
